The source of the “minty” character is attributed to airborne transfer from the Eucalyptus trees, which line this specific Cabernet Sauvignon vineyard, to the grape berries. The outer wax layer of the berries adsorbs eucalyptol, a compound responsible for the aroma, released into the air by the trees. It then dissolves during the fermentation process, which takes place on the skins, inevitably giving the wine a “minty” character unique to this vineyard.

Bright gold in brilliant appearance. A richly aromatic nose with aromas of Seville marmalade, quince, candied ginger and stone fruit. The invitation to aromas of red apples and caramel continues with a delicate floral scent.
Constance wine is a sweet wine, ideal with foie gras or dessert.
